PostHeaderIcon The Best Raw Soup Ever! (Carrot Coconut Curry Soup!)

this is the best darn raw soup I have ever had.. and its ever Hot! (very warm.. still raw!)

Equipment: All you need is a vittamix Blender..! No dirty pots/pans!!

Ingredients:
3 cups of Carrots (Baby carrots are the easiest) Make sure they are ORGANIC.. cause carrots are a root veggie and will naturally absorb any Chemicals or pesticides used.. no matter how much you clean the outside.. the toxins will be WITHIN!

2 TBS of Coconut Butter/Creamed Coconut (not to be mistaken with coconut oil. coconut butter is the Whole inside of the coconut all ground up… so yummy.. its like peanutbutter! (without the peanuts!))
1 tsp or less of Curry Powder (I love the curry powder in the whole foods bulk section..)
1/2 tsp of fresh ginger (you can sub for about 1/4 tsp of dry ginger.. but fresh ginger is a real treat!)
1 TBS lemon Juice
1 tsp Sea Salt
water to cover/ get the blender to mix.

Place everything in the vittamix.. and BLEND! put on high.. and wait until its your desired temperature.. will only take a few minutes.

PostHeaderIcon Cheesey Veggie Stir-fry (Veggie Mac-n-Cheese?)

start boiling water, with some sea salt. add 2 cups of some kind of curly pasta (corn, rice, regular, ect)

cook up:
Butter
Onions
Carrots

till brown.

throw in:
Garlic
Kale (dino, curly, or purple)
Yellow bell pepper
cook till kale is wilted.

turn off pan

when the pasta is done. drain the pasta and throw some butter in the pan. (couple tablespoons?)
then add potato starch. (Tablespoon and a half?)

mix well. add 2 cups of water… cook till it boils..
add in about a cup or more of cheddar cheese. (I just did it by eye) its best to grate it. but I didn’t feel like it so I just threw in chunks. :-D
Add about a tablespoon and a half of mustard powder.
about half a tsp of herbamire (seasoning sea salt)
and then a little pour of apple cider vinegar

mix up really good. then add pasta to the top. then mix well.. then add the pasta cheesey mixture to the veggie mixture.

and YUM. my new creation I made tonight…. this recipe is basically just so I can remember how I did it.
some time I will actually make it a recipe that other people can read and not mess up :-D

Whole foods now carries a ‘Soy-Sauce’ that doesn’t have any soy in it!!.. its made from coconut nectar (which is very good for you.!)
